At a certain point, when we've listened to enough music that fits in the same little boxes, the new stuff becomes less interesting because there aren't any tricks left we haven't heard before.

I'll use power metal as an example. When you first get into it, and you find whatever roster of bands it is you like (for me it was Edguy, Hammerfall, Helloween, etc), it's thrilling. As time goes on, you start to realize that all those bands, and the ones that come later, keep writing songs that are following the same blueprints. There isn't much in the way of development for most of those bands, and after a while they start circling around with riffs and melodies that start to sound like things that have already been done.

In that case, it's natural to feel bored and want to move on to something new. It's also why some bands out there (like Iron Maiden) have changed up their approach. They've tried to combat that staleness, because after long enough the fans will refuse to see any album as being as good as the classics, simply because they don't sound unique anymore. It's hard to assess quality when one sounds like everything else.
